Baked Mackerel Fillets

2 lbs of skinless mackerel fillets
1/2 cup olive oil
1/4 tablespoons lemon juice
2 cloves garlic, crushed
1 cup dried breadcrumbs
1/2 cup grated Parmesan cheese
3 tablespoons chopped parsley
1/2 teaspoon of dried basil
1/2 teaspoon of dried thyme
Divide the fillets into six portions and place in a shallow baking dish.
Combine oil, lemon juice and garlic. Pour this marinade over fish and let stand for 30 minutes in a cool place, turning once.
Preheat the oven to 375 degrees.
Remove the fish from the baking dish, pour off and reserve marinade. Combine breadcrumbs, cheese and herbs. Roll fillets in breadcrumb mixture and return them to the baking dish.
Sprinkle remaining breadcrumbs over the fillets and moisten with a few tablespoons of the reserved marinade.
Bake in a 375 degree oven for about 10-15 minutes, or until fish flakes easily when tested with a fork.
Serves six.
