H&H Coffeeshop Burritos
From the H&H Coffeeshop in El Paso Texas, via Saveur

1 lb of tri-tip beef
1 medium onion, diced
2 tablespoons of oil
2 jalapenos, diced
4-5 Roma tomatoes, diced
2 garlic cloves, minced
1 large (makes 2 cups) beef bullion cube, smushed with the side of a cook’s knife
Salt and pepper
Six “burrito-sized” flour tortillas (not jumbo burrito-sized)
Heat oil in a wide skillet over medium heat. Add onions and cook until soft.
Trim the beef of fat and cut into 1/2-inch dice. Raising the heat to high, add beef and jalapeno to the onions. Brown the beef for two minutes. Stir in tomatoes, garlic and the smushed bullion cube. Stir to mix well and cover. Simmer over low heat 20 to 30 minutes until beef is tender.
Heat the tortillas one at a time on a warm skillet or comal. Place a warm tortilla on a cutting board. Spoon 1/6 of the burrito filling on the tortilla, approximately in the lower center of the burrito. Fold up the lower third of the tortilla over the filling, fold in the sides and roll it up.
Makes six burritos, a hearty meal for two.
