Singapore Fried
Noodles (Mee Hoon Goreng)
From Vatch's Southeast Asian Cookbook
2 tablespoons oil
1 garlic clove, finely chopped
1 teaspoon curry powder
2 oz fresh shrimp
2 oz BBQ pork cut into small pieces
1 egg lightly beaten
8 oz of rice vermicelli
2 oz of bean sprouts
2 oz of carrots cut into fine match sticks
1 tablespoon fish sauce
1 tablespoon light soy sauce
1 teaspoon sugar
black pepper
Heat the oil in a wok and fry garlic until golden. Add the
remaining ingredients in succession, strirring well between
each addition.
As soon at the pepper is stirred in, turn out on a plate
and serve.
